Ambrosia Salad
This classic Ambrosia Salad is a nostalgic fruit salad made with sweet pineapple, mandarin oranges, shredded coconut, and fluffy marshmallows tossed in a creamy Greek yogurt or sour cream dressing. - 1 20 oz can crushed pineapple or pineapple tidbits (in juice), drained
- 1 10–15 oz can mandarin oranges (in juice), drained
- 1 cup shredded coconut sweetened or unsweetened
- 1 cup mini marshmallows use fruity marshmallows for added color
- 1 cup full-fat plain Greek yogurt or sour cream
- 1 –4 maraschino cherries for garnish (optional)
In a large bowl, combine the drained pineapple, drained mandarin oranges, shredded coconut, marshmallows, and Greek yogurt or sour cream.
Gently fold everything together until well coated.
Cover and refrigerate for at least 1 hour (up to 2 hours) to allow the flavors to meld.
Before serving, garnish with maraschino cherries and a sprinkle of coconut if desired.
