- 1 tsp dried thyme
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp cracked black pepper
- 2 tbsps olive oil
- Sprinkle of garlic powder
- ¼ cup balsamic vinegar
- 2 tsps Dijon mustard
- 2 tsps honey
- 1 tbsp Worcestershire sauce
- 1 ½ cups grape tomatoes
- ⅓ cup chopped fresh parsley
In a small bowl, mix thyme, smoked paprika, sea salt, black pepper, and garlic powder.
Rub the chicken breasts (or thighs) evenly with the spice mixture.
Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until browned and cooked through.
In the same pan, add balsamic vinegar, Dijon mustard, honey, and Worcestershire sauce. Stir and cook for 2 minutes to reduce slightly.
Add grape tomatoes and cook for another 3-4 minutes until they soften.
Return chicken to the pan to coat with sauce and warm through.
Garnish with fresh parsley before serving.
