- 1 small onion peeled, whole
- ½ cup panko breadcrumbs
- 500 g / 1 lb beef mince ground beef, preferably with higher fat content
- 1 egg
- 2 garlic cloves minced or grated
- 1 beef stock cube crumbled (or 1/2 tsp kosher salt)
- ½ tsp kosher salt adjust if using other salt types
- ¼ tsp black pepper
- ⅓ cup pickled jalapeños roughly chopped (~3mm)
- 1 ½ cups 150g cheddar cheese, shredded
- ½ cup 50g parmesan cheese, shredded
- 2 sheets frozen puff pastry 24cm / 9.5", preferably butter-based
- 1 egg separated (yolk for brushing, white optional for sealing)
- For Sprinkling
- 1 tsp white sesame seeds
- ½ tsp black sesame seeds or more white if preferred
Preheat oven to 200°C/390°F. Line a baking sheet with parchment paper.
Grate or finely chop the onion.
In a large bowl, combine onion, breadcrumbs, beef mince, egg, garlic, crumbled stock cube (or salt), pepper, jalapeños, cheddar, and parmesan. Mix well by hand.
Cut each pastry sheet in half to create 4 rectangles.
Divide the beef mixture into 4 portions and shape into logs, placing one along each pastry strip.
Roll the pastry over the beef to form a log. Seal edges with egg white if needed.
Cut each roll into 4 pieces (16 rolls total) and place seam-side down on the baking sheet.
Brush tops with beaten egg yolk and sprinkle with sesame seeds.
Bake for 25–30 minutes or until golden and puffed.
Let cool slightly before serving.
