Ingredients
  

  • 3 tablespoons vegetable oil
  • 6 6-ounce skinless, boneless chicken breast halves, thinly sliced
  • ½ cup sliced onions
  • ½ cup sliced red bell pepper
  • ½ cup tomato juice
  • 2 tablespoons taco seasoning mix
  • 1 cup salsa
  • 8 slices French bread 1/2 inch thick
  • 2 cups shredded Cheddar cheese

Instructions
 

  • Heat oil in a large skillet over medium-high heat.
  • Add chicken and sauté for 5–6 minutes until lightly browned.
  • Stir in onions and red bell pepper; cook for another 3 minutes.
  • Pour in tomato juice and taco seasoning; simmer for 3–4 minutes.
  • Add salsa and cook for 2 more minutes until everything is well combined and heated through.
  • Preheat your oven broiler.
  • Arrange French bread slices on a baking sheet. Spoon the chicken mixture over each slice.
  • Top with shredded cheddar cheese.
  • Broil for 2–4 minutes until cheese is bubbly and golden.
  • Serve immediately.
