Chicken Caesar Pasta Salad
This Chicken Caesar Pasta Salad is a hearty twist on the classic Caesar salad—perfect for summer cookouts, potlucks, or an easy weeknight dinner. Made with tender pasta, juicy grilled chicken, crisp romaine, cherry tomatoes, parmesan cheese, and crunchy sourdough croutons tossed in creamy Caesar dressing, it's a delicious balance of comfort and freshness. - 8 oz penne or rotini pasta
- 1 lb grilled chicken breasts about 2 cups, cooked and chopped
- 1 head romaine lettuce chopped
- 2 cups cherry tomatoes halved (1 pint)
- ⅓ cup shaved or shredded parmesan cheese plus more for topping
- Sourdough croutons homemade or store-bought
- ½ cup healthy Caesar dressing or store-bought, adjust to taste
Cook pasta according to package directions. Drain and let cool.
If not already cooked, grill or pan-sear chicken breasts. Let cool, then chop into bite-sized pieces.
While the chicken is cooking, make sourdough croutons and Caesar dressing if preparing from scratch.
In a large salad bowl, combine the cooled pasta, chopped romaine lettuce, chicken, halved cherry tomatoes, and parmesan cheese.
Add ½ cup Caesar dressing and toss until well coated. Add more dressing to taste.
Just before serving, top with sourdough croutons and extra parmesan. Serve chilled or at room temperature.
