Ingredients
  

  • 4 cups boiled potatoes
  • 2 cups shredded boiled chicken
  • ½ cup cheese your choice, shredded
  • Salt to taste
  • 1 teaspoon black pepper
  • 2 eggs
  • ½ cup panko or other breadcrumbs
  • ½ cup flour

Instructions
 

  • Mash the boiled potatoes until smooth.
  • In a bowl, combine shredded chicken, cheese, salt, and black pepper.
  • Take a small amount of mashed potatoes, flatten it, add a spoonful of the chicken mixture in the center, then fold and shape into croquettes.
  • Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Coat each croquette first in flour, then dip in egg, and finally coat with breadcrumbs.
  • Heat oil in a frying pan over medium heat. Fry croquettes until golden brown on all sides, about 3-4 minutes per side.
  • Drain on paper towels and serve warm.
