- For the Brownie Layer:
- 1 cup sugar
- 2 large eggs
- ½ cup unsalted butter melted
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate chips
- For the Cookie Dough Filling:
- ½ cup sweetened condensed milk
- ½ cup maraschino cherries chopped
- ½ cup mini chocolate chips optional
Make the Brownie Batter:
In a large bowl, whisk together sugar and eggs. Stir in melted butter and vanilla extract. Add flour, baking powder, and salt. Mix until smooth, then fold in chocolate chips.
Bake the Brownie Base:
Spread batter in a greased or parchment-lined 8x8-inch baking pan. Bake at 350°F (175°C) for 18–20 minutes or until a toothpick comes out mostly clean. Cool completely.
Prepare the Cookie Dough:
In a medium bowl, combine sweetened condensed milk with chopped maraschino cherries (and mini chocolate chips if using). Stir until evenly mixed. Chill for 15 minutes.
Assemble the Bombs:
Break the brownie into pieces and roll into 18–20 small balls. Flatten slightly, then place about 1 tsp of cookie dough mixture in the center. Wrap the brownie around the filling and roll into a smooth ball.
Chill and Serve:
Place the bombs on a parchment-lined tray and chill for at least 30 minutes before serving. Optional: drizzle with melted chocolate or dust with cocoa powder for extra flair.
