Preheat & Boil:
Preheat oven to 400°F (200°C).
Bring a pot of water to a boil. Cut baby potatoes in half (or quarters if larger).
Add potatoes to the boiling water and cook until fork-tender (10-15 minutes).
Drain and return to the pot.
Season the Potatoes:
Add neutral oil, salt, onion powder, and Cajun seasoning to the pot.
Toss gently to coat the potatoes evenly.
Roast the Potatoes:
Lightly coat a baking tray with oil.
Arrange potatoes cut-side down on the tray.
Bake for 25 minutes, then flip and roast for another 15 minutes, or until golden brown and crispy.
Make the Garlic Butter:
In a saucepan over low heat, melt butter and olive oil.
Add minced garlic, paprika, pepper, salt, and sugar.
Stir occasionally and cook for 1-2 minutes, until fragrant.
Toss & Serve:
Drizzle the garlic butter over the roasted potatoes and toss to coat.
Serve immediately and enjoy!
