Ingredients
  

  • Potatoes
  • 1 lb mixed baby potatoes rinsed and cleaned
  • ¼ cup neutral oil
  • ½ tsp salt
  • 1 tbsp onion powder
  • 1 tbsp Cajun seasoning
  • Garlic Butter
  • ½ cup butter
  • 2 tbsp olive oil
  • 15-20 cloves garlic minced
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ½ tsp salt
  • ½ tsp sugar

Instructions
 

  • Preheat & Boil:
  • Preheat oven to 400°F (200°C).
  • Bring a pot of water to a boil. Cut baby potatoes in half (or quarters if larger).
  • Add potatoes to the boiling water and cook until fork-tender (10-15 minutes).
  • Drain and return to the pot.
  • Season the Potatoes:
  • Add neutral oil, salt, onion powder, and Cajun seasoning to the pot.
  • Toss gently to coat the potatoes evenly.
  • Roast the Potatoes:
  • Lightly coat a baking tray with oil.
  • Arrange potatoes cut-side down on the tray.
  • Bake for 25 minutes, then flip and roast for another 15 minutes, or until golden brown and crispy.
  • Make the Garlic Butter:
  • In a saucepan over low heat, melt butter and olive oil.
  • Add minced garlic, paprika, pepper, salt, and sugar.
  • Stir occasionally and cook for 1-2 minutes, until fragrant.
  • Toss & Serve:
  • Drizzle the garlic butter over the roasted potatoes and toss to coat.
  • Serve immediately and enjoy!

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer for crispiness.
