Ground Turkey Sweet Potato Skillet

- 2 tbsp olive oil
- 1 tbsp garlic minced
- 1 lb ground turkey
- 1½ tbsp ground cumin
- 1 tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup onion diced
- 1 yellow bell pepper diced
- 3 small or 2 large sweet potatoes peeled & diced (~3 cups)
- ½ cup water more if needed
- ½ cup mozzarella shredded
- ¼ cup fresh cilantro chopped
Heat a large skillet over medium-high heat. Add olive oil and garlic and sauté for 1 minute.
Add ground turkey and break apart with a wooden spoon. Cook for 8 minutes until browned.
Stir in cumin, chili powder, salt, and black pepper.
Add onion and bell pepper; cook for 3–4 minutes until softened.
Add sweet potatoes and water, stir, and cover. Cook for 6–8 minutes until potatoes are tender. Add more water if needed.
Remove lid, adjust seasoning if needed, and sprinkle with mozzarella. Let it melt.
Remove from heat, garnish with fresh cilantro, and serve warm!
