Ground Turkey Sweet Potato Skillet

Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp garlic minced
  • 1 lb ground turkey
  • tbsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup onion diced
  • 1 yellow bell pepper diced
  • 3 small or 2 large sweet potatoes peeled & diced (~3 cups)
  • ½ cup water more if needed
  • ½ cup mozzarella shredded
  • ¼ cup fresh cilantro chopped

Instructions
 

  • Heat a large skillet over medium-high heat. Add olive oil and garlic and sauté for 1 minute.
  • Add ground turkey and break apart with a wooden spoon. Cook for 8 minutes until browned.
  • Stir in cumin, chili powder, salt, and black pepper.
  • Add onion and bell pepper; cook for 3–4 minutes until softened.
  • Add sweet potatoes and water, stir, and cover. Cook for 6–8 minutes until potatoes are tender. Add more water if needed.
  • Remove lid, adjust seasoning if needed, and sprinkle with mozzarella. Let it melt.
  • Remove from heat, garnish with fresh cilantro, and serve warm!
