Ingredients
  

  • 4 cups thinly sliced peeled potatoes
  • 2 tablespoons butter melted
  • ½ teaspoon salt
  • 1 pound ground beef
  • 1 package 10 ounces frozen corn
  • 1 can 10-3/4 ounces condensed cream of celery soup, undiluted
  • cup 2% milk
  • ¼ teaspoon garlic powder
  • teaspoon pepper
  • 1 tablespoon chopped onion
  • 1 cup shredded cheddar cheese divided
  • Minced fresh parsley optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the sliced potatoes with melted butter and salt. Arrange them on the bottom and sides of a greased 13x9-inch baking dish.
  • Bake, uncovered, for 25-30 minutes or until the potatoes are almost tender.
  • Meanwhile, in a large skillet over medium heat, cook the ground beef until no longer pink; drain excess fat.
  • Spread the cooked beef and frozen corn evenly over the baked potatoes.
  • In a separate bowl, whisk together the cream of celery soup, milk, garlic powder, pepper, chopped onion, and 1/2 cup of shredded cheddar cheese. Pour the mixture over the beef and corn.
  • Return the casserole to the oven and bake, uncovered, for 20 minutes or until the vegetables are tender.
  • Sprinkle the remaining 1/2 cup of cheddar cheese over the top and bake for another 2-3 minutes, or until the cheese is melted.
  • Garnish with minced parsley, if desired. Serve hot.
