Italian Sausage Gnocchi

- 1 lb spicy ground Italian sausage
- 1 lb gnocchi uncooked
- 1 medium onion diced
- 4 cloves garlic minced
- 2 tbsp flour
- 1 tsp Italian seasoning
- ½ - 1 tsp red pepper flakes
- ½ tsp salt
- 1 tsp freshly grated black pepper
- 1 cup chicken stock
- 1 cup heavy cream
- 8 oz frozen chopped spinach thawed and well-drained
- ½ cup parmesan cheese freshly grated
- 1 ½ cups pepper jack cheese
Preheat oven to 375°F (190°C).
Cook the Sausage: In a large oven-safe skillet over medium-low heat, cook the Italian sausage. Add the diced onion and minced garlic, sautéing until the sausage is fully cooked.
Make the Sauce: Stir in the Italian seasoning, red pepper flakes, salt, and black pepper. Sprinkle flour over the mixture, tossing to combine. Pour in chicken stock and heavy cream, stirring well. Bring to a low boil and allow the sauce to thicken for about 2-3 minutes.
Add Cheese & Spinach: Stir in half of the parmesan and pepper jack cheese until melted. Add the drained spinach and uncooked gnocchi, mixing well.
Bake: Top with the remaining cheese and transfer the skillet to the oven. Bake for 18-20 minutes, or until the top is golden and slightly toasted.
Serve & Enjoy: Let cool slightly before serving. Garnish with extra parmesan or fresh herbs if desired.
