- For the burgers:
- ⅓ cup fresh cilantro roughly chopped (about 1.5 oz)
- 3 tbsp mango chutney
- 1 tbsp + 1½ tsp soy sauce or tamari
- 1½ tsp kosher salt Diamond Crystal, see notes
- 1 tsp curry powder
- 1 tsp chili powder
- 2 tsp garlic powder or 3 garlic cloves, grated
- 1 small Honeycrisp apple coarsely chopped (4-5 oz after chopping)
- 4 scallions coarsely chopped
- 2 lbs ground dark-meat turkey
- Neutral oil for cooking grapeseed, canola, avocado oil, etc.
- For serving:
- 8 brioche buns pretzel buns, English muffins, or preferred buns
- Lettuce ketchup, relish, raita, tzatziki, or other condiments
In a food processor, blend cilantro, mango chutney, soy sauce, salt, curry powder, chili powder, garlic, apple, and scallions until smooth (1-2 minutes).
In a large bowl, mix the apple mixture with ground turkey using your hands until well combined.
Lightly oil a ½ cup dry measuring cup, then use it to scoop the turkey mixture into 8 portions.
Shape each portion into a burger patty with oiled hands. The mixture will be very moist.
If needed, refrigerate the patties for up to 3 days before cooking.
Heat a large grill pan over medium to medium-high heat. Brush with 1 tbsp oil.
Cook burgers for 8 minutes total, flipping after 3-4 minutes. Flip again if needed, ensuring they are fully cooked. The internal temperature should reach 165°F.
Let the burgers rest for 4-5 minutes.
Toast the buns and prepare condiments. Assemble and enjoy!
