Ingredients
  

  • Pretzel Dough:
  • 3 ½ cups all-purpose flour
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 cup warm water
  • 1 tbsp sugar
  • 1 tsp salt
  • Mozzarella Filling:
  • 8 oz fresh mozzarella cut into small cubes
  • 2 tbsp chopped fresh rosemary
  • ¼ cup grated Parmesan cheese
  • Baking Soda Bath:
  • 4 cups water
  • ¼ cup baking soda
  • Topping:
  • Grated Parmesan cheese
  • Fresh rosemary leaves for garnish

Instructions
 

  • In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  • Add flour and salt, then knead into a smooth, elastic dough.
  • Cover and let rest for 30–45 minutes, or until doubled in size.
  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix mozzarella cubes, rosemary, and Parmesan to make the filling.
  • Divide the dough into 8 portions and roll each into a rope. Flatten slightly.
  • Spoon filling into the center, fold dough over, and seal the edges. Shape into pretzels.
  • In a saucepan, heat water to near boiling. Remove from heat and stir in baking soda.
  • Carefully dip each pretzel into the baking soda bath for 30 seconds.
  • Transfer pretzels to the baking sheet. Sprinkle with Parmesan and rosemary.
  • Bake for 15–20 minutes until golden brown and crispy on top.
  • Cool slightly before serving. Enjoy warm for the best gooey texture.
