Mushroom, Shallot, and Herbed Goat Cheese Tarts

Ingredients
  

  • 10 4-inch puff pastry squares (see notes)
  • 8 oz mushrooms sliced (any variety)
  • 1 shallot finely chopped
  • 3 garlic cloves minced
  • cup fresh parsley roughly chopped
  • 2 tbsp olive oil
  • ¼ cup parmesan cheese grated
  • 4 oz goat cheese
  • ¼ tsp each: dried sage thyme, rosemary, salt, and pepper
  • 1 egg whisked (for egg wash)
  • ¼ cup white wine or substitute with chicken broth

Instructions
 

  • Prepare the Puff Pastry:
  • Preheat oven to 400°F (200°C).
  • Line two large baking sheets with parchment paper.
  • Arrange the puff pastry squares on the baking sheets, keeping them 1–2 inches apart.
  • Using a fork, poke small holes on each square (without piercing through completely).
  • Make the Filling:
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add shallots and garlic; sauté for 1–2 minutes until fragrant.
  • Stir in mushrooms, remaining olive oil, and spices. Cook for 2 minutes.
  • Pour in the white wine and cook for 4–5 minutes, stirring occasionally.
  • Remove from heat and mix in goat cheese, parmesan, and parsley until creamy.
  • Assemble the Tarts:
  • Spoon generous scoops of the filling onto each puff pastry square.
  • (Optional) Pinch the sides or corners for a decorative shape (see notes).
  • Brush the bare edges of the pastry with the whisked egg wash.
  • Bake & Serve:
  • Bake for 25–30 minutes or until the pastry is golden brown.
  • Let cool slightly before serving. Enjoy!
