Pâté de Sardine
This sardine pâté is a fast and elegant appetizer that swaps traditional liver for briny, rich sardines. - 2 cans oil-packed sardines about 4 oz each
- 4 tbsp unsalted butter at room temperature
- 1 large shallot chopped
- 2 tbsp fresh lemon juice
- 3 tbsp finely chopped fresh herbs chives, parsley, or dill
Add the sardines (with their oil), butter, shallot, and lemon juice to a food processor. Blend until smooth.
Add 2 tbsp of the chopped herbs and pulse 2–3 times to combine.
Transfer the pâté into a small ramekin or back into the sardine cans. Smooth the surface with a spatula.
Sprinkle the remaining 1 tbsp of herbs on top.
Wrap tightly with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Serve chilled with baguette toasts, crackers, or vegetable sticks.
