Ingredients
  

  • For the Chicken:
  • 2 large boneless skinless chicken breasts (approx. 1 pound)
  • 1 tablespoon Italian seasoning
  • Salt and freshly cracked black pepper to taste
  • 1 tablespoon avocado oil
  • For the Sandwich:
  • 8 slices of bread
  • 4 tablespoons mayonnaise optional
  • cup pesto
  • 6 ounces fresh mozzarella sliced
  • 4 Roma tomatoes sliced
  • Avocado oil for brushing

Instructions
 

  • Prep the Chicken:
  • Slice the chicken breasts horizontally to create four even cutlets.
  • Season with Italian seasoning, salt, and black pepper.
  • Cook the Chicken:
  • Heat a skillet over medium-high heat and add avocado oil.
  • Sear the chicken cutlets for 3-5 minutes on each side or until fully cooked.
  • Toast the Bread:
  • In the same skillet, toast the bread until golden brown.
  • Assemble the Sandwich:
  • Spread mayonnaise on one half of the bread and pesto on the other.
  • Layer with cooked chicken, mozzarella, and tomato slices.
  • Top with the remaining slice of bread.
  • Final Toasting:
  • Brush the sandwich with avocado oil.
  • Toast in the skillet until the cheese melts and the sandwich is heated through.
