Pickle Grilled Cheese

Ingredients
  

  • 4 slices whole wheat bread or sprouted wheat bread
  • 2 tablespoons mayo or light mayo
  • 2 slices cheddar cheese
  • 2 –3 dill pickles sliced
  • 2 tablespoons softened butter

Instructions
 

  • Prepare the Pickles:
  • Pat the sliced dill pickles dry with a paper towel and set aside.
  • Assemble the Sandwiches:
  • Place two slices of bread on a cutting board.
  • Spread a layer of mayo on each slice.
  • Layer the sliced pickles and cheddar cheese on top of the mayo.
  • Top each sandwich with the remaining bread slices.
  • Butter the outside of each sandwich with softened butter.
  • Cook the Sandwiches:
  • Heat a large nonstick skillet over low-medium heat.
  • Place the sandwiches in the skillet, buttered side down.
  • Cook for 3-5 minutes or until the bread is golden brown.
  • Flip carefully using a spatula and cook the other side until golden and the cheese is melted.
  • Serve:
  • Remove from the skillet, cut in half, and serve immediately.
