Raspberry Jam Bars

- 125 g 1 stick unsalted butter, melted
- ½ cup brown sugar packed
- 1 large egg 55–60g
- 1½ cups all-purpose flour
- 1½ cups rolled oats not quick or steel-cut
- ½ tsp baking powder
- Pinch of salt
- 1 cup raspberry jam or other flavor of choice
Preheat oven to 200°C/400°F (180°C fan). Grease an 8-inch (20cm) metal pan and line with parchment paper, leaving overhang for easy removal.
Prepare the base: Melt butter in a bowl. Stir in brown sugar until smooth, then mix in egg. Add flour, oats, baking powder, and salt and mix until combined.
Assemble: Press 1½ cups of the mixture into the pan. Spread jam over the base (microwave slightly if needed for easier spreading). Crumble the remaining mixture over the top.
Bake: Bake for 30–35 minutes until the top is deep golden.
Cool completely in the pan (~2 hours), then lift out using the parchment overhang. (Speed up cooling: 30 min on counter + 30 min in fridge.)
Cut into 16 squares and enjoy!
