Rice and Italian Sausage
This hearty Rice and Italian Sausage dish is a comforting one-pan wonder perfect for any night of the week. With juicy Italian sausages, vibrant red peppers, and fragrant herbs all simmered in savory beef broth, it's one of those quick dinner ideas that never fails. - 6 medium-sized Italian sausages 375 g
- 1 tbsp olive oil
- 1 sweet red pepper diced
- 1 cup long grain rice
- 3 ¼ cups beef broth
- 1 ½ tbsps fresh chopped chives
- 3 tbsps fresh chopped parsley
- 2 tbsps mixed seeds optional
- Salt and pepper to taste
In a large skillet, heat olive oil over medium heat. Add sausages and cook until browned on all sides and cooked through, about 10–12 minutes. Remove and slice.
In the same skillet, add diced red pepper and sauté for 3–4 minutes until slightly softened.
Stir in the rice and toast for 1–2 minutes.
Add beef broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
Add the sliced sausages back into the pan along with chives, parsley, and mixed seeds (if using).
Season with salt and pepper. Stir gently and cook for another 5 minutes until the rice is tender and most of the liquid is absorbed.
Serve hot, garnished with extra herbs if desired.
