Slow Cooker Taco Dip

- 1 pound ground beef turkey, or chicken
- 16 ounces cream cheese cubed
- 1 pound Velveeta or American cheese cubed
- 8 ounces salsa spice level as preferred
- 1 10 oz can Rotel (diced tomatoes and green chilies), undrained
- 2 tablespoons taco seasoning
- ¾ –1 ¼ cup milk or half and half
- Dippers: tortilla chips corn chip scoops, raw vegetables
In a large skillet over medium heat, cook ground meat until browned, about 8–10 minutes. Drain excess grease and blot with paper towels if necessary.
In a 2-quart or larger crockpot, layer half of the Velveeta, salsa, Rotel, cooked meat, and taco seasoning. Repeat layers.
Cover and cook on low, stirring every 20–30 minutes, until melted and smooth (about 30 minutes to 1 hour, depending on your slow cooker).
Whisk in ¾ cup milk or half and half, adding more as needed to reach desired consistency. Set heat to “warm.”
Serve warm with tortilla chips, corn chip scoops, or raw veggies for dipping.
