- For the Wraps:
- 2 packs of Acme Salmon Candy
- 6 large romaine lettuce leaves
- ¼ cup breadcrumbs
- 2 Persian cucumbers
- Slices of red onion
- ¼ cup pepitas
- For the Dressing:
- 2 tbsp capers roughly chopped
- 1 egg yolk
- Juice of 1 lemon
- ¼ cup olive oil
- 1 tbsp Dijon mustard
- 2 tbsp Greek yogurt or sour cream
- 3 tbsp grated parmesan cheese
- Sea salt to taste
- Pepper to taste
To make the dressing, combine the capers, egg yolk, lemon juice, Dijon mustard, sour cream, and parmesan cheese in a bowl. While whisking, slowly drizzle in the olive oil until the dressing is smooth and well combined. Season with salt and pepper, adjusting the olive oil for desired creaminess.
In the same bowl, add sliced red onion, pepitas, and break the Acme Salmon Candy into bite-sized pieces. Mix until everything is well coated and creamy.
In a skillet over medium-low heat, toast the breadcrumbs, stirring frequently for about 5 minutes or until they begin to brown.
To assemble, spoon the salmon Caesar mixture into each lettuce wrap and top with the crispy breadcrumbs.
