Ingredients
  

  • 14 oz 400g frozen cooked mussel meat, defrosted in fridge overnight
  • 3 –4 tsps minced garlic
  • 5 shallots thinly sliced
  • 1 tbsp butter
  • 1 tsp dry oregano
  • 1 cup cooking cream 35%
  • 2 tbsps fresh chopped parsley
  • ½ tsp fennel seed
  • Salt and pepper to taste
  • Zest of 1 lemon

Instructions
 

  • In a large skillet, melt butter over medium heat. Add shallots and garlic; sauté until fragrant and translucent, about 3–4 minutes.
  • Stir in fennel seed, oregano, and mussel meat. Cook for another 3–4 minutes until mussels are heated through.
  • Pour in the cooking cream and bring to a gentle simmer. Cook for 5 minutes until slightly thickened.
  • Season with salt, pepper, and lemon zest. Stir in fresh parsley just before serving.
  • Serve hot over cooked pasta of choice—linguine or spaghetti work beautifully.

Notes

  • You can substitute fresh mussels if desired—just steam and de-shell them first.
