Ingredients
  

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 tablespoon taco seasoning
  • ¼ cup water
  • ½ cup black beans optional
  • ½ cup corn optional
  • ½ cup shredded cheese cheddar or Mexican blend
  • ¼ cup sour cream or Greek yogurt
  • 1 avocado diced
  • ¼ cup chopped cilantro
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions
 

  • Bake the Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45–50 minutes, or until fork-tender.
  • Cook the Meat: While the potatoes bake, heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain any excess fat.
  • Season: Stir in taco seasoning and water. Simmer for 5 minutes until the mixture thickens. Add black beans and corn if using, and stir to heat through.
  • Assemble: Slice open the baked sweet potatoes and fluff the insides with a fork. Top with taco meat mixture, cheese, avocado, sour cream or Greek yogurt, and fresh cilantro.
  • Serve: Squeeze fresh lime over the top and enjoy warm!
