Ingredients
  

  • 1 lb chicken breast or strips, thawed and uncooked
  • 4 medium potatoes peeled and cubed
  • 1 large onion diced
  • 2 cups cottage cheese
  • 1 cup sour cream
  • ½ cup Parmesan cheese
  • ¼ cup fresh parsley chopped
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese shredded

Instructions
 

  • Preheat oven to 375°F. Grease a 13x9” or 3-quart baking dish with cooking spray or butter.
  • Peel and cube the potatoes. Boil in salted water for 10 minutes, then drain and set aside.
  • Cut chicken into 1-inch pieces and set aside.
  • In a bowl, combine diced onion, cottage cheese, sour cream, Parmesan cheese, chopped parsley, cayenne, salt, and pepper. Stir until mixed.
  • Add the cubed chicken and boiled potatoes to the bowl, and stir to combine.
  • Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
  • Bake for 40 minutes or until the top is golden brown and bubbling.
