- 2 slices whole wheat bread
- ½ cup shredded mozzarella part-skim
- 1 roma tomato thinly sliced
- 1 thin slice of red onion
- 8 fresh basil leaves
- Pinch of kosher or sea salt
- ⅛ teaspoon pepper
- 1 tablespoon extra-virgin olive oil
Prepare the Bread:
Brush olive oil over both slices of bread using a pastry or basting brush. Sprinkle each slice with a pinch of salt and pepper.
Assemble the Sandwich:
Place one slice of bread, oil-side down, on a clean surface. Layer with basil leaves, tomato slices, onion, and shredded mozzarella. Top with the second slice of bread, oil-side up.
