Waldorf Salad

- 2 medium apples chopped (such as Honeycrisp and Granny Smith)
- 1 cup red seedless grapes halved
- ½ cup diced celery
- ½ cup chopped walnuts
- ½ cup plain yogurt regular or Greek or mayonnaise
- ¼ cup golden raisins optional
- ¼ cup fresh parsley optional
- ½ Tablespoon lemon juice
- ½ teaspoon sea salt
- Black pepper to taste
Toast walnuts in a dry skillet over medium heat for 2–5 minutes, stirring occasionally, until fragrant. Remove and let cool.
In a large bowl, combine chopped apples, grapes, celery, toasted walnuts, yogurt (or mayo), lemon juice, raisins, and parsley (if using).
Toss well to coat. Taste and season with sea salt and black pepper.
Serve immediately, optionally over a bed of fresh lettuce.
